I want to present you something.....
It is a recipe of 'American Maki-zushi.'
Try to cook Japanese foods!
Though I am not a sushi-chef, I can cook 'American Maki-zushi.'
Recipe of "American Maki-zushi (Rolled-sushi)"
'Sushi' is one of the most famous Japanese foods. And now, Sushi is served at many Japanese restaurants, also at some Chinese restaurants, in the world. Surely we can eat Sushi at Panda East in Amherst, at Ichiban and Teapot in Northampton.
There are many kinds of Sushi in Japan. Popular ones are 'Nigiri-zushi' and 'Maki-zushi.' Nigiri-zushi is an oval-shaped rice with sliced raw fish. Maki-zushi is a fish, vegetables and/or anything rolled with rice and seaweed. If you go to Sushi-bar, you can find 'Sushi Set', which is a combination of Nigiri-zushis and Maki-zushis, in the menus and see the performance of making sushi.
Here I show you two kinds of Maki-zushi, 'Hoso-maki-zushi' and 'Huto-maki-zushi.' Hoso-maki-zushi is a thin rolled sushi and Huto-maki-zushi is a thick rolled sushi. Though I want to cook traditional maki-zushis, I can't buy some Japanese foods here. So I show you "American Maki-zushi" using some vegetables and tuna.
Stuff
Rice (Japonica, not Indica)
Roasted seaweed (8 inches square)
"Sushi-no-ko (powder type rice vinegar with some sugar)"
or Rice vinegar and sugar
Tuna can (chunk light tuna in vegetable oil)
Vegetables (orange pepper, red pepper, green squash, abogado)
Rice Cooking by Microwave Oven (It's easy!)
1. Wash two cups of rice with water several times in a bowl. (One cup = 180ml)
2. Remove water with a basket.
3. Put washed rice into a deep dish.
4. Add 480ml water.
5. Wrap the dish with a plastic wrap with some punctures.
6. Place for 30 minutes at least.
7. Place the dish on a microwave plate.
8. Cook on High about 17 minutes.
9. Turn over several times in order to remove excess moisture
※If you have a rice cooker, I surely recommend you to use it!
Preparing Sushi-rice
1. Add Sushi-no-ko (or a spoon of rice vinegar and a little amount of sugar) to rice
2. Mix well until remove excess moisture.
Preparation of Vegetables
1. Cut an orange pepper and red pepper to stick shapes
2. Peel a green squash roughly and cut to stick shapes
3. Hull an abogado and cut to stick shapes
Rolling and Cutting
1. Lay a bamboo mat or an Aluminum foil cutting larger than seaweed.
2. Lay seaweed on the mat.
3. Put sushi-rice thinly on the seaweed except for an upper one-inch.
4. Put vegetables and/or tuna straightly at a lower one inch on the rice.
5. Roll the seaweed from front to behind gently but firmly.
6. Roll two or three times to make the roll to round shape.
6. Cut the roll to a proper length.
Eating
Eat a Maki-zushi with soy sauce, optionally adding 'Wasabi (Japanese horseradish).'
Appendix
'Maki-zushi' is right pronunciation. It is not 'maki-sushi.'
Traditional hoso-maki-zushi generally contains a piece of raw tuna, cucumber or kanpyo, which is a dried rope of pepo.
Traditional huto-maki-zushi contains a piece of baked egg, kanpyo, shiitake mushroom, spinach and anything.....
In Japan, there are many kinds of sushi, for example, nigiri-zushi, maki-zushi, oshi-zushi, tyakin-zushi, temaki-zushi, tirashi-zushi, inari-zushi.
You can buy 'Sushi-no-ko' and roasted seaweed at Kim's Shop on Rout 9 in Hadley.
Raw fish for sushi must be extreme fresh! So it is difficult to buy raw fish for sushi here.
