EGG CURRY
Ingredients 4 eggs 6 tbsp vegetable oil 3 tbsp curry powder 4 medium size
potatoes 3 cm ginger 2 garlic 1 medium size onion 4 cloves 4 cardamon 1 cinnamon
stick 1 star anise ? tsp sugar 4 - 5 tbsp coconut milk 3 cups of water Salt
to taste (11/2 tsp) Methods 1.Boil the eggs and peel of the skin 2.Add ? cup
of water to the curry powder and mix it well 3.Blend the coconut milk with
1 cup of water 4.Grind the ginger, garlic and onion together 5.Peel of the
potato's skin and cut each one into 4 pieces 6.Heat oil and fry cloves, cinnamon
stick and star anise for a few second then add the grind garlic, onion and
ginger. Fry until fragrant. 7.Add curry powder and stir occasionally to make
sure it didn't burn. Fry for about 5 - 8 minutes. 8.Then add the coconut milk,
water potatoes, sugar and salt 9.When it is boiling, add the eggs and simmer
until the potatoes are cooked.
FRIED PRAWN
WITH LONG BEANS
Ingredients 10 - 15 prawns 10-15 long beans 1 onion (medium size) 10 - 15
long beans 1 onion ? teaspoon of tumeric powder 6 tbsp vegetable oil ? tsp
salt Methods 1.Peel the prawn's skin but leave the tails. 2Seasoned prawns
with salt and tumeric powder 3Cut each long beans into 3 - 4 4Sliced the onion
5Heat the oil in a fry pan and fry the prawns until ? cook 6Then add the long
beans. After a while add 3 - 4 tbsp of water 7Add sliced onion and fry a few
more minutes and turn off the heat
MALAY SALAD
(Jelatah)
Ingredients 1 cucumber ? fresh pineapple 1 onion 2 tbsp sugar ? tsp salt 2
tbsp vinegar 2 tbsp lemon juice Methods 1Scratch the cucumber using fork and
finely sliced. 2Slice the pineapple. 3Cut the onion into 2 and finely sliced.
4Put the cucumber, pineapple and onion in a bowl. Add sugar,salt,vinegar and
lemon juice.Mixed the ingredients well and stand for 5 minutes before serving.
