成型の終わった生地を一般的には38℃85%(パンによって違う)の場所で発酵させます。
成型において力を加えた為に、硬くなったグルテンは伸びにくく、そのまま焼いたのではボリュームが小さく、火通りの悪 いパンになってしまう。
そこで再び生地を膨らませることにより、グルテンを柔らかくし、火通り、窯伸びの良いパンを作ります。

焼 成 Calcination

1.発酵によって起こる炭酸ガスの発生により、パンのボリュームが向上する。

でんぷんは水と一緒に熱を加えると消化しやすいアルファ ーでんぷんとなり、口溶けの良いおいしいパンになる。
3.クラストに焼き色を付け、味と香りを向上させる。パンにきれいな焼き色を付ける事により、パン独特の美味し い味と香りを付る。
4.イーストのガス発生を止め、同時に各種の酵素の作用も止める(温度が上昇し高温に成る為)。
そのため保存 のきくパンと成る。
この焼成によって、そのままでは食べられないパン生地は、黄金褐色の美味しそうな焼き色と、風味豊かな、ふっくらとた食感を持ったパンに変化する。 |
