Introduction

I'd worked part-time sushi chef for three years in the school days. This page intoroduce the method of making Sushi.(how to make Roll-Sushi and how to make Nigiri-Sushi)

There are not only method to introduce here but also there are various methods, and many people who improve style by themselves are in the method of making sushi.
Therefore, it is one example that is introduced here. This is not all.

How to make sushi rice

Sushi-vinegar on supermarket mixed to hot rice cooked hard.
When Sushi-vinegar mix in the rice, do it little by little.
As large as possible of the bowl is good.

If you can be done, a wooden bowl is good. It is because the water that wooden products are unnecessary water is absorbed and taken.

If you can't obtain Sushi-vinegar on supermarket, please make Sushi-vinegar by the next point.

Mix the next material toward the rice (per rice 3 cup).

Mix fully and cool the rice with a fan.
Start making if the rice is chilled comparatively. (^^)/

How to make Nigiri-sushi


Take the amount of quantity that rice is seized first with one's right hand, and make shape only with the right hand.
Take a raw fish the thumb of the left hand.

Spread horseradish on raw fish in the forefinger of the right hand. Nigiri-sushi 2
Hold rice lightly in the thumb of the left hand, and hold it by a feeling that a cube is made from the thumb, forefinger, middle finger of the right hand. Nigiri-sushi 3
Overturn sushi with your right hand. It is a vertical direction to overturn it.
The part which hasn't been covered yet by the finger since it is overturned is supposed to come to the position of the left hand thumb.

With covering the part which hasn't been covered yet by the finger in the thumb of the left hand. Make the pan of the cube from the forefinger, middle finger, third finger, little finger of the left hand. Nigiri-sushi 5
Then, hold it lightly in the forefinger of the right hand and the middle finger from the top so that you may make raw fish news item and rice stick. Nigiri-sushi 6
Hold top and bottom lightly with your left hand, and hold a side in the thumb of the right hand and the forefinger to prepare shape at the end. Nigiri-sushi 7

How to make Roll-Sushi

Both big Roll-Sushi and middle Roll-Sushi are the same method. It's only different the amount of rice and the size of the laver, the amount of raw fish etc. .

First, extend rice as the figure on the laver in the side direction, and put it. Roll-sushi 1
Next, add a left hand in the left, and make a wall. Then, extend rice with your right hand in the vertical direction. Roll-sushi 2
Next, add a right hand in the right, and make a wall. Then, extend rice with your left hand in the vertical direction. Roll-sushi 3
Then, extend the center of the rice which hasn't been extended yet by using the both hands in the vertical direction. Roll-sushi  4
Put some raw fish etc., and spread horseradish. Roll-sushi  5
Pinch a "Sunoco (the tool which winds Sushi)" with your right hand, and lift it, and wind it, and go. Roll-sushi  6
Put an extreme bottom part on the close place at the top of the laver. Roll-sushi 7
Then, it turns half, and use both hands as the figure, and hold it lightly. Hold the wall of the front in the thumb, and it is the middle finger, third finger, and hold an opposite wall. A forefinger holds the top. It is the image of making a cube. Roll-sushi 8
